ANZAC BISCUITS
Makes two trays. This is one of the most famous recipes within Australia and New Zealand. ‘Anzac’ stands for ‘Australian and New Zealand Army Corps,’ and apparently soldiers used to eat these biscuits in the war time. I expect that this is an improved upon version of the original recipe, since they taste much better than anything you would expect to eat in the army... The texture is uniquely chewy and delicious.
Ingredients
2 cups rolled oats
2 cups whole wheat flour
2 cups raw sugar
1 ½ cups desiccated coconut
2 tablespoons sugar syrup (golden syrup)
250 grams butter
2 tablespoons boiling water
2 teaspoons baking soda
1. Preheat oven to 160°C and oil two baking trays.
2. Mix together oats, whole wheat flour, raw sugar and coconut.
3. Melt the syrup and butter. Add boiling water and baking soda to the melted syrup and butter mixture.
4. Add the liquid mix to the dry ingredients. Mix well and spoon onto baking trays, flattening each biscuit with a fork.
Make sure that the biscuits are not placed too closely together, as they will spread.
5. Bake for about 10 minutes. The biscuits will be very soft when removed from the oven, but will set to a chewy texture as they cool.
